Happy Hallows

 This afternoon I harvested the small volunteer pumpkin from the garden, Hollowed it out, and then found a pattern for an incised face. 

My daughter got pumpkins today as well, which she, her husband and two teens will carve tomorrow - my grandkids love the toasted pumpkin seeds!

Winter squash is often more tasty than pumpkin - one way I prepare either is a Pumpkin Pie Quinoa bake . I use an Air Fryer (about 25 minutes at 325°), this makes a nice filling in half an acorn or delicata squash (scoop some out, to use in the filling)

I sometimes add 1/4 C shredded coconut, raisins, 1/4 C carob powder &/ or 1 Tbsp cacao nibs!

  2. Quinoa is a staple food - only for myself, the family is like "nah, thanks".
    The pumpkins on your steps look lovely. I love the fall season!

    1. I get that - I eat a lot more quinoa than my daughter n her family!
      They are pretty - stock image though!

    1. Oh, I hope you can! It's got so many advantages -
      • In the spinach family, it's a naturally gluten free pseudograin
      • high in usable protein
      • cooks in about 20 minutes (so i often add it to brown rice ~ 20 minutes in, put cool out with its 'cousin' buckwheat

  4. I love winter squash also! My grandson got my hooked on quinoa years ago and like anything new to try, I was a bit hesitate. But once I tried it, I loved it.

      Our Costa Rican style restaurant has quinoa stuffed peppers, drizzled with a lovely sauce - so good!!

    1. It doesn't appeal to everyone!
      They're fun
      For several years son-in law tossed spent pumpkins in a corner of the garden and they'd have several volunteers ... this year one came up, and I've had my eye on it!
